First you have to make sure the turkey is good and dead.
A 12-pounder of Shenandoah's finest is slowly lowered into into the cauldron of bubbling oil.
Splash down.
Sizzle sizzle.
Cover and wait 41 minutes.
A perfectly roasted turkey emerges.
Crispy on the outside, tender on the inside.
Voila.
The now carved turkey is served alongside a Southwest stuffing (cornbread, andouille sausage, peppers, corn) roast potatoes, green beans with candied pecans, and a pumpkin mash. Cranberry jalapeno jelly for the brave; regular cranberry sauce for the traditionalists.
